Cocoa powder is of two types, natural cocoa powder and Dutch-processed or alkalized cocoa powder. Natural cocoa powder is bitter in taste and cannot be used in all sweet products. Dutch-processed or alkalized is treated with an alkali to neutralize its acids and imparting a sweet taste. We specialize in alkalize cocoa powder. Cocoa powder is made when chocolate liquor is pressed to remove three quarters of its cocoa butter. The remaining cocoa solids are processed to make fine unsweetened cocoa powder.
